Yellow Rice

Ingredients:

  • 1kg Samba rice
  • 100g ghee or margarine
  • 1 teaspoon saffron powder
  • 3 teaspoon salt powder
  • 4 cloves
  • 2″ piece of cinnamon
  • 6 cardamoms
  • 100g onions-sliced
  • 3″ piece of rampe
  • 1½ bulb sera
  • 2 cups coconut milk (from ½ coconut)

Method:

Squeeze coconut milk to make about 2 cups of milk, add saffron and salt and dissolve. Wash the rice and drain the water, in a pan heat ghee or margarine add onions, rampe, sera, and spices once sauted add the rice let the margarine coat the rice lastly add the milk and water to make the required quantity of liquid to boil the rice.
