Mughlai Chicken

Ingredients:

  • 1kg chicken (cut in pieces)
  • 3 tablespoons oil
  • 1″ piece of ginger and 3 cloves of garlic (ground)
  • 1 teaspoon saffron/or turmeric powder
  • 5 dried red chillies/1 dessertspoon chillie powder
  • 1 teaspoon cardamoms (about 4)
  • 2″ piece of cinnamon
  • 1 cup unsweetened yoghurt (250ml)
  • 50g ground cashew nuts, 1 teaspoon garam masala
  • 1 tablespoon lime juice, 25g chopped coriander leaves

Method:
Heat the oil and fry the onions till golden brown. Stir in the ginger and garlic, add the chicken and fry for 5 minutes next add the rest of the ingredients except the cashew nut, yoghurt and coriander leaves, mix all the ingredients till the chicken is coated, next add ½ the yoghurt, cover and cook on slow fire till chicken is tender, finally add the yoghurt, cashew nuts and top with chopped coriander leaves.
